From an athletic biathlon to a tasty triathlon is how you might describe today’s Kornspitz. These are the culinary roots of an extremely successful athlete, who was led by love from the far east of Russia to the Austrian area of Schladming. “Russians and caviar, that's the best cliché you can eat,” laughs Ekaterina at the Kornspitz interview. For the exact reason that, as an athlete, one must pay so much attention to one’s diet, food is a much more emotional topic, because the moment when you can let go are far too rare. “The special value of things often lies in their limitations,” says Ekaterina, seemingly already thinking of her Kornspitz.

There is not much to explain, as it is a “triathlon” of cream cheese, red caviar and parsley. That’s it. Nothing else. Nothing. The cream cheese carries the caviar, making it creamier. The parsley is fresh, green and also adds a slightly bitter note that really rounds off the taste. To serve, just spread plenty of cream cheese on the bottom slice of your Kornspitz and top it with plenty of red salmon caviar. Garnish with parsley.
Alternatively, it is also possible to cut the Kornspitz into slices – in blinis, if you like – and to top the slices accordingly.
Either way, this dish is an absolute classic and rightly known far beyond the borders of Russia. Just like in the biathlon, Ekaterina hit the mark with the red caviar.
