Snack ideas based on in-house products show what is possible with bread and rolls as a base. The street food tent presents five themes: lye, barbecue, ancient grain, confectionery and a wood-fired oven. There is also a lot to discover in the bakeries in the House of Bread.
The typical shine and colour of lye pastries can be seen in a variety of shapes and sizes. Classic pretzels and cheese pretzels can be enjoyed as they are, while lye bites harmonise with salmon and a mustard-dill sauce, and the lye roll makes a thoroughly convincing burger. Brezengold is the ideal baking agent for these lye recipes. The lye croissant, made with P&C by backaldrin, is an airy puff pastry served with a Bavarian cheese spread.
Ancient grain variations
The knotted Urkorn roll and Urkorn bread made with Urkorn Concentrate contain the nutty taste of emmer, einkorn and spelt. The aroma is complemented by wholegrain wild rye sourdough, sunflower seeds, potato flakes, malt extracts, yoghurt and honey. Here backaldrin combines the knotted Urkorn roll with a salmon spread and the Urkorn bread with a Greek-style cheese spread. There are also other ancient grain specialities to be discovered.
Sweet temptation with Urkorn waffles and pancakes
Ancient grains are also excellent in sweet baked goods, as the backaldrin confectioners prove with freshly prepared waffles and pancakes made on site with UrkornCake Mix. Emmer, einkorn and spelt deliver a golden colour and a well-balanced, nutty taste that blends well with fresh fruits and chocolate sauce. All-time classic spelt curd balls are also not to be missed.
Kurkuma and Durum for barbecue
Baked goods are the perfect accompaniment to a barbecue. Recipes made with KurkumaMix and the seed and flake combination, Sabia, are also real eye-catchers. The aromatic pointed roll is paired with thinly sliced pork and horseradish for a delicious snack. Durum grill sticks, made with Durum 100, are filled with pulled turkey, coleslaw and fresh avocado for an equally tasty snack.

Muesli bread – A new start to the day
Muesli bread, made with the new Mueslibread Mix, is backaldrin’s answer to a yeast-free wholegrain bread that’s ideal for breakfast. The hearty bread contains grains and a cereal mixture. For production, only the addition of water is necessary. The resultant muesli bread stays fresh for a long time. backaldrin’s master bakers have three varieties to present: nut-raisin, banana-milk and chocolate-milk. backaldrin offers versions for sliced bread and for bars, with pasteurisation instructions for the sliced bread.
