Hi there table tennis and Kornspitz fans! Even when it’s hot outside, there’s no break from training. After all, nothing comes from nothing. That’s the way it is with food. I need something decent to keep up my strength.
I simply love everything Asian… who would’ve thought? So it’s great that I can combine so many different ingredients with a Kornspitz. You’ll be amazed at how good my “Chicken&Veg Kornspitz Snack” tastes.
Preparation
Start by cutting the vegetables into fine strips. In this recipe, I have used carrots, sugar snap peas, fresh bean sprouts and bamboo strips. Bring the carrot strips, sugar snap pea strips and bean sprouts to a quick boil – max. one minute – and then immediately dunk into ice cold water. Drain the strips well and then place in a bowl with the bamboo strips. Cut the spring onion into thin slices, finely chop the peanuts and place them in the bowl. When it comes to the chili, you’ll have to decide for yourself how many tears you want to shed. Now chop the coriander finely and fold it into the mixture. Add a little salt and the rice vinegar for the marinade. This spicy-sour salad is the perfect contrast to the slightly sweet-salty chicken.
Speaking of the chicken; simply cut it in pieces, heat some peanut oil in a pan and fry the chicken in the hot oil until crispy. When the chicken is nicely browned, add the sesame seeds to the pan and toast lightly. Add a dash of good-quality soy sauce and leave on the stove until the sauce coats the chicken pieces.
All that’s left is to put it all together and enjoy. This is a really good and particularly light snack. By the way, a bit of extra chili in the wintry months helps ward off the sniffles and helps to quickly clear the head!!
