Pasta catches everyone in the end. Some manage to stay away from it for longer, while others eat it before they can even run, let alone say pasta. Nadine belongs to the former group and, to this day, doesn’t particularly enjoy eating pasta BUT there is this dish that her friend told her about and that they then cooked together. “In addition,” admits Nadine, “noodles are a pretty good source of energy just before competitions.” Especially now, in the hot training and competition phase, and especially in preparation for the World Cup in Ukraine, pasta is extremely popular.
Opinions differ when it comes to deciding which noodles to use, which is good in itself, because there are so many. The only important thing is that you should not rinse the pasta under cold water for a long time after cooking. It is best to remove it from the water, drain it and add a little olive oil, before adding it to the sauce.
Preparation
For Nadine's pasta, you basically just have to put the ingredients in the right order in the pan and you're done. First, heat a good dash of olive oil over medium heat. Then slowly sweat the diced onion. After about a minute, add the minced garlic. Do not brown the onion and garlic. Next, add the diced tomatoes and all the juice. It is best to use the small, sweeter cherry tomatoes. In addition to the fresh tomatoes, you can chop some dried tomatoes and add them. Their aroma goes perfectly with smoked salmon. Now season the whole thing with oregano, a little nutmeg and paprika and pour in the cream. Simmer the sauce gently over low heat until it has reduced slightly. Finally, season with salt. And now, as already mentioned, it is best to pour the freshly cooked noodles directly from the water – well drained, of course – into the sauce.
Where is the salmon? We didn’t forget it. The smoked salmon should not be cooked with the sauce; simply cut it into strips and add to the pasta at the very end.
Finally, spread the finished pasta dish onto a Kornspitz. Top with the smoked salmon strips, then add some fresh oregano and, most importantly, a few drops of lemon juice, to create a fresh and tangy balance.
